Plate of Yummy Cookies

Vegan Peanut Butter Cookies

Ingredients:
1/2 cup plus 2 tablespoons all natural peanut butter
1/2 cup pure maple syrup
  2 tablespoons plus 2 teaspoon coconut oil
  1 teaspoon pure vanilla extract
2/3 cup white whole wheat flour
1/3 cup almond meal (or grind almonds in food processor until finely ground)
  1 pinch sea salt
1/2 teaspoon baking soda

With a mixer cream:
peanut butter
maple syrup
coconut oil
vanilla extract

Combine in separate bowl:
flour
almond meal
salt
baking soda

- Add the dry ingredients to the wet, in 3 batches. Using a spatula give a few stirs between each batch.
- Stop stirring as soon as flour mixture has been completely incorporated. Do not over mix.
- Spoon tablespoon size drops onto parchment lined baking sheet.
- Use a wet fork to make an indention in the top of each cookie. Keep wetting fork so it won't stick to cookie.
- Bake at 350 for 8-9 minutes on the parchment lined baking sheet. Do not over bake.
- Makes about 38 cookies.
